Truffles

When cleaning the truffle, do not wet it merely brush it with a soft brush to remove any dirt. Shave or cut into paper thin slices for most recipes. Store any leftover truffle by wrapping in a paper towel and placing in a sealed plastic container. Keep in the refrigerator and use within a week.

Try this to maximise the wonderful aroma of the truffles whilst retaining the truffles to use later. Place one or two in a large jar of either Avorio rice, pasta shells or eggs, the truffle aroma will permeate the rice, pasta and even the eggs through the shell. After about three days just use the pasta rice or eggs to make a simple dish, there is no need for elaborate flavourings the ingredients will have a super truffle flavour.
