Truffle juices and seaweed agars are combined and then pearlised to produce caviar berry like orbs which have a rich truffle taste with a slight briny tang. The texture of the truffle pearls is akin to that of caviar as you roll the individual spheres on your tongue before popping them on the roof of your mouth.
