Smoked Garlic String
This string of highest quality large bulb garlic is gently smoked to permit the aroma of the smoking to permeate the garlic without softening the bulbs. Delicious smeared over a bruschette as an easy garlic bread, chopped and stirred into soup, or try our recipe for Garlic Mashed Potatoes:
2kg purple violet potatoes, peeled & quartered
Coarse salt and freshly ground pepper.
8 heads smoked garlic peeled and mashed
100g butter
100ml milk
Cover potatoes with water, cook until tender, drain and mash. In small saucepan, combine smoked garlic, butter and milk. Cook over low heat, stir into a smooth paste. Mash together potatoes and smoked garlic mixture. Season generously with salt and pepper. Serves 4 to 6.
