Bottarga, or boutarque, is a Sardinian speciality and the weapon of choice when you want to pack a briny punch into your food. Bottarga is delicious thinly sliced, drizzled with lemon juice and layered over pasta, beans, salads, or simply drizzle with finest olive oils and spread over rustic bread. Bottarga has a luxurious taste and texture and must be tried by all foodies.
This is a perfectly ripened bottarga, with clear, even, roe. This bottarga is salted, pressed, and then air-dried until the moment of perfection. You really must experience this fishy treat.
