Mirabelle mousse
1 kilo mirabelle puree
400ml fresh double cream
400g castor sugar1tbsp8 egg whites
Brandy (optional
Whip the cream until making peaks, beat the egg whites until stiff peaks, fold in castor sugar. Mix the whipped cream with the mirabelle puree and brandy. Gently mix in the egg white mixture. Pour the mix into ramekins or large bowl and chill for at least 5 hours.
