Halibut is an extremely popular fish with chefs and seafood lovers. It has a firm white, thick flaked, meat. It's subtle and sweet taste combines beautifully with strong flavours and spices. Delicious in curries and stir fries, Halibut is a very versatile fish.. (*approx weight)

Recipe

Baked halibut with almonds

5 halibut steaks
75ml olive oil
juice 1 lemon
sea salt
100g toasted almonds
black pepper
chopped flat leaf parsley, and lemon wedges to garnish

Preheat oven to 180C

Oil a baking tray and place steaks in a single layer, sprinkle with the lemon juice, salt, and pepper., drizzle with olive oil and place in oven.

After ten minutes scatter the almonds over the halibut steaks and return to the oven for ten more minutes. Check that the halibut is cooked by seeing how it flakes, when done it will flake very easily. Place on heated serving dish and sprinkle with parsley, serve with lemon wedges. (Needs to be ordered 24 hours before delivery day)
