Escolar is rich, firm-fleshed fish from the coasts of South America, also known as Walu and the Hawaiian Butterfish. It has a lobster-like texture and a similar depth of flavour. A fish for connoisseurs. Try it Fiji style with our recipe for Kokoda. (*approx weight)

4 Escolar supremes
Juice of 4 limes
sea salt
I can coconut cream
2 onions. finely sliced
chopped chilli to taste
3 beefsteak tomatoes, finely chopped and drained
Cut the escolar into small cubes and place in a ceramic, glass or plastic bowl. Add the salt and juice, stir and leave to marinate in the fridge for 8 hours
The lime juice will 'cook' the escolar and all you need to do after the marination is stir in the other ingredients and serve. (Needs to be ordered 24 hours before delivery day)
