Dill seeds 350g
Dill is widely grown throughout the Mediterranean and has been used since ancient times. The Romans added ground dill seeds to bread, which they would give to gladiators as a stimulant before battle. Dill gives a fantastic aroma to casseroles, makes wonderful salad dressings, and is a staple for the pickling of fish
Recipe
Smoked eel canapés
250g cream cheese
50g mayonnaise
5g dill seeds
small bunch flat leaf parsley, finely chopped
2 drops Boyajian lemon oil
Mini pastry cases
Mix all ingredients well and pipe into the base of mini pastry shell, top with smoked eel and slivers of radish for decoration.
