Schnitzeled crayfish tails
beaten egg
dried breadcrumbs (not the orange breadcrumbs!)
salt, pinch of cayenne, pinch of black pepper
crayfish tails, patted dry with kitchen roll
good quality frying oil
In a pan heat up the oil until a cube of bread dropped in becomes brown within 2 minutes. Mix the egg and seasoning together. Dip the crayfish tails into the egg and then into the breadcrumbs and fry in the hot oil until golden brown and crispy (should just take a couple of minutes). Drain on kitchen roll and serve with lemon wedges.
