Recipe
Cooked king prawns with lemon and ginger dressing
Dressing:
Juice and zest of one lemon
1 teaspoon finely chopped fresh ginger
sea salt
black pepper
1 teaspoon runny honey.
Cooked king prawns,
mixed salad,
toasted pine nuts,
extra virgin olive oil
Mix all the dressing ingredients (can be stored for three days in the fridge.)
Toss the peeled, cooked king prawns in the lemon and ginger dressing and scatter over a plate of mixed salad. Liberally sprinkle with toasted pine nuts then drizzle with the olive oil.
