Bottarga grated, 70g
Bottarga (also known as boutarque) is a Sardinian specialty, and once you have tried it you will want to taste it again. Hand salted mullet roe is dried and then grated for an intensity of flavour that is unsurpassed.
It is not used in recipes as such, it is the topping on the salad, sprinkled over pasta, mixed with finest olive oil and used as a dip for bread.
