Bath Soft is a creamy soft white locally produced cheese made from unpasteurised cow's milk which is hand made at Kelston near Bath. It is a full fat soft cheese, which is likened to a mellow Brie that is white mould ripened and square in shape. The cheese dates back to Admiral Lord Nelson who was sent one by his father in 1801. it is made and sold in 240g squares, which are packed in parchment with a distinctive red wax seal.
If serving on a cheeseboard, remove the cheese from the fridge an hour before serving, to allow it to come to room temperature and to develop its full texture and flavour. Serve with biscuits such as cream crackers
