Bapamanga custard.

3 egg yolks.
600 ml bapamanga purree..

Combine the egg yolks with the purree and place in heat proof bowl over a pan of slow boiling water, stir constantly until the mixture thickens..

Use hot as a gourmet custard replacement, or chill for eating later. Makes a wonderful trifle custard
