These charming and delicious baby aubergines bring a new and youthful twist to all aubergine dishes. More delicately flavoured than the adult plant they are exquisite in moussaka, and make a fantastic aubergine Parmigiana.

Recipe

baked baby aubergines

10 baby aubergines
3 pickled lemons, defleshed and cut into strips
10 sprigs fresh basil
100g extra virgin olive oil
salt and pepper to taste

Heat oven to 220C. Slice each aubergine in half lengthwise, not quite to the top. Insert pickled lemon slices and the basil sprig into the aubergines, Drizzle with olive oil then cover with foil and bake for about 40 minutes until the aubergines are soft basting frequently. (Needs to be ordered 24 hours before delivery day)
