500g apricot puree
1 sheet gelatine, softened in 3tbsp water
3 tbsp lemon juice
250 ml whipping cream
In a small saucepan put gelatine, lemon juice and sugar and heat until the gelatine is completely dissolved then refrigerate while whipping the cream into stiff peaks. Fold in whipped cream. Spoon into ramakins and refrigerate for three hours.
