Iberian Acorn Ham is a highly prized delicacy. The Iberian pig, an ancient breed of long legged black pigs, is born, bred, and reared in a region of oak and cork forests. It is this rearing process and the inclusion of acorns in the diet that gives the Iberian Acorn Ham it's distinctive silky bands of fat and luscious smooth meat.
This Jamon is cured between 28months to 36months, and selected at the exact point of perfection by experts. This slow and careful process, from the salting, drying and maturing in a secadero, and the final cellaring in an underground bodega is the reason that this ham is so highly prized.
The Iberian pig is a world apart from the modern farmed animal that most hams come from.

Recipe
Iberian Ham with hot figs
5 figs, cut in half
10 slices of Iberian ham
Finest quality Olive Oil
dash of sherry vinegar
In a shallow frying pan heat some olive oil and fry the figs for one minute each side. Add dash of sherry. Place the 10 slices around a palate and put one half of fig on each slice, mix the pan juices with the sherry and drizzle onto the figs.
All the great hams need a great carving knife, a flexible one, specially made to ensure even cutting without tear.
