More words have been written about the prince of wine than the number of bottles lying in the crayeres beneath the chalk-rich soil of the region from which it takes it name.

The art of science of viticulture were bred into the region since Roman times, awaiting the day when the use of cork as a stopper was rediscovered by visiting Spanish monks and the Benedictine monk Dom Perignon's blending skills, creating a sparkling white wine of consistently high quality from red grapes.
